    Pesto Pasta Dish

    For all of you who are not 100% raw but like to eat gluten-free, dairy-free, sugar-free, and soy-free, and with the freshest ingredients possible (or at least trying to OR who are not trying to and just like yummy gourmet food), I have a great recipe that (tastes just like the original) I created last night. I decided that the boys in my life deserved some hearty, warm, comfort food (it's one of the first cool days in SD this Fall). 

    Pasta:
    gluten-free rice spaghetti noddles

    Sauce (sauce is RAW):

    1c raw pine nuts
    1c fresh basil
    ½c olive oil
    3 lemons, juice only
    1Tbls nutritional yeast
    6 garlic cloves

     Cook ⅔ box of noodles in boiling water (follow box instructions). Blend all "sauce" ingredients in the Cuisinart until smooth. When pasta is hot and ready to serve, add sauce and enjoy. Top with fresh basil!

    Of course it's always great to add a fresh tossed salad with tons of avocado.

    GREAT for pregnancy cravings and/or very hungry men! The sauce is so nutritional and raw, so you can feel good about eating this and feeling really full.

    TOTAL COST (pine nuts are expensive): $15 and serves three adults plus my 17 month old.

Just 5 minutes and you’ve got breakfast. So often I get asked for breakfast ideas when transitioning to a plant based diet. This is a great egg sub and is savory and high in healthy protein. 
1 cube medium hard tofu 
1 tsp turmeric 
Salt and pepper to taste. 
1/2 Tbsp olive oil or other cooking oil 
In a frying pan sauté on medium high heat for 5 minutes. Stirring often. Add garlic or onions or cheese. I added spinach to mine. 😋

    If you haven’t made this cold lentil salad yet you’re missing out. It’s tangy (lemon) and full of protein (plant protein). Perfect for a pot luck. Or snack on it for a few days. 
INGREDIENTS
3 cups cooked lentils (cold)
1 whole lemon, juiced
1/2 tsp sea salt
1/2 tap cumin
3 Tbsp dried parsley
1/4 cup olive oil
1/2 zucchini (julienned)
1/4 red onion (Finley chopped)
DIRECTIONS
Mix everything in a bowl. Enjoy.

    Damn this combo of garlic, ginger and tahini over sautéed potatoes is 💣. I love tahini dressing because of how creamy it gets without using cashews or dairy products. I first sautéed the potatoes in vegan butter. I added a few shallots for fun. THAT’S IT. If you cut them thin enough they cook in just 5-6 minutes on medium high heat. I added raw kale to them for added fiber and minerals. 
Dressing 
2 cloves garlic
1/4 inch piece of fresh ginger
1 whole lemon
2-3 Tbsp sesame oil, 
1 heaping Tbsp tahini
2 Tbsp water
big pinch sea salt. 
blend it all together until creamy and chunk-free. 
Enjoy
