OK, so I am super addicted to artichokes. It's one of those things I craved when I was pregnant. I remember one night eating two of them and that was my dinner! I had two whole artichokes. I was in heaven and literally ate 2 in less than an hour. I still can't get enough. I thought I would be over it after being preg. I'm not. I'm totally eating RAW but every so often get an attack.
Let me just tell you that they are NOT raw, they are fully cooked and soft and HOT and wonderful!
Here's how I do them, in case you have a craving. If you do, I say go for it - over indulge and be happy. They are very healthy and definitely hit the spot.
Put 1 inch high water in a pot
Add ends of onion, celery, garlic cloves.
pour a little olive oil in the mix,
add the artichokes and
THEN simmer for 45 minutes.
Sauce:
Vegan Mayonnaise (or cashew butter)
lemon
fresh dill (lots)
MMMMMMMMMMMMMMMMMMMMM. That's all I gotta say.
