Another wonderful recipe from Kimberlie {of Tomberlies}. This has got to be good. Afterall, she is the queen of dessert!
Cheezecake:
Crust:
1 c. almonds ground with ½ tsp. salt. Add 4 large, soft dates,
pulse to form dough. Press into 8" spring form pan. Freeze.
Filling:
3 c. cashews
juice of one lemon
½ c. agave
1 ½ c. coconut H20 or almond milk
½ c. melted Cacao butter
1 vanilla bean
Blend first 5 ingredients until smooth, add in melted cacao butter,
pour into spring form pan. Freeze for one hour, or chill in
refrigerator overnight.

One more question, as I can't wait to make this....Are the cashews always soaked for a Cheesecake? This looks so creamy, I had to ask!

Made this yesterday turned out GREAT!!!! Did not soak the cashews and added a half of a vanilla bean! Thanks so much!

Anna - AWESOME! Thanks for sharing. Sorry I didn't get back to you on the cashews questions sooner. You do NOT HAVE TO soak cashews, it's just recommended. When in doubt just soak for like 20 minutes.
