I've been meaning to post this recipe for a long time.
Coconut jerky is a life changer for multiple reasons. We drink TONS of young coconut water here at home. And of course, mom is always stuck with the job of scraping out the inside coconut meat and finding a use for it in some recipe or smoothie. Does anybody else have this issue?
Well if so, here is my solution, no need to look any further for recipes, because I got you covered. I've been making it every week for like 10 months now. All of my kids love it!
It does require a dehydrator but I will say it again, and again, every healthy gourmet kitchen needs a dehydrator. They aren’t expensive; they are low energy; and there is so much you can do with them.
My favorite dehydrator, always, is the Excalibur. It dries well and evenly and you can do a lot of different things at one time. I make loads of kale chips in this machine.
My second favorite is the Ninja Air frier. This appliance is awesome because it air fries OR it dehydrates. You get two in one for a very low price. But you can’t make large batches in here. Just small ones.
Dehydrated Coconut Jerky Recipe
Ingredients
Meat of 5-6 young coconuts {yields one tray of jerky and probably won't last but 5 minutes in a household}
½c Nama Shoyu or Tamari {gluten-free}
1tsp olive oil
1tsp chili flakes {or more if you like it spicy}
1 Tbls nutritional yeast {optional}
Fresh herbs of all kinds - basil, oregano, dill - chopped
Directions
Open the young coconuts and carving out the meat into strips {with a spoon}. Drink the water and share it with your family.
Mix all of the ingredients together. Let the meat soak in mixture for about 30 minutes {stir and toss it in the meantime}
Transfer to a Teflex dehydrator sheet. Dehydrate for 12 hours at 112 degrees F.
This is SUPER EASY. Which is why I make it all of the time.
My son loves it so much. There are very few things he obsesses over and hoards, this is one of them. That and kale chips.

can you use tamari instead of nama shoyu in this recipe?

diana - yes, you sure can. whatever you feel like using in your house. it will taste wonderful with tamari.

Hi, Looks yummy, Do you think this would this work on a salad, like how people traditionally add chicken or fish to salads to make it more filling?

Hi Jodie, no. i wouldn't do that! instead i have some walnut "taco" meat you can try for that. this is more of a little tasty snack. or even add my simple basic tofu bites. hope that helps. 😉
