Quinoa is a wonderful gluten-free grain replacement that is so delicate yet much higher in protein than other grain counterparts.
It is a pseudocereal rather than a true cereal, or grain, as it is not a grass either. Its leaves are also eaten as a leaf vegetable, much like amaranth.
It sprouts wonderfully. Try using it in a raw tabouli salad.
Or cook it up and serve warm.
Quinoa Recipe
1 c red or plain quinoa
2 c water
1 veg boullian cube
Boil the water and quinoa, turn down heat and cook on low for about 20 minutes.
This
recipe is awesome because you can add any kind of vegetable, herbs,
nuts, seeds, greens, garlic, dates, mushrooms, onions and oils (olive oil or flax oil). Be creative, add
lots of avocado as well!
Kids love quinoa as well. My son is in love with it. You can have it for breakfast, too.
