All I have to say is OMG. I have had only one of these, and since I don't often eat rich dessert, I already feel sick - sick in the way I used to when I was a kid on Halloween night!
I know, doesn't sound that healthy. But it sure does beat your average Reese's Peanut Butter Cup. Made with organic raw cacao powder, organic peanut butter, agave, honey, cacao butter - all vegan, no dairy or white sugar, and high in antixodants and healthy fats.
Move Over Reese's!
Plus, you can make them at home in less than 10 minutes, if you hurry! I'm always in a hurry so unless you're like me, you might want to add another 5 to that.
A great idea for a pregnancy craving. Or better yet, if you have to make something to bring to a party or if you're having company. I made mine while my kids were playing in the same room.
measure cacao the way I did, in the photo above.
haha. look at this terrible mess. they come out looking perfect somehow. pour slowly, don't fill up the molds very high. save some chocolate for the tops
Recipe: {yields approx 12 chocolates}
CHOCOLATE
1c cacao butter*
¾c raw cacao powder
3Tbls raw honey, heaping
sea salt, tiny pinch
FILLING
⅛ - ¼c peanut butter
2tsp agave nectar
sea salt, tiny pinch
For the chocolate, warm the cacao butter on the stove until it turns to a clear liquid.
*measure the cacao butter as shown above.
Meanwhile, for the filling, mix all ingredients until thoroughly mixed. I did it in a Magic Bullet. Done. Set aside.
Then, back on the stove, add sea salt and add cacao powder. Turn off flame. Mix and mix until dark. Then add honey, mix and mix. This mixture should not separate if it is warm. Keep mixing until smooth.
Pour chocolate into your mold, whatever that might be. I did hearts and squares. Just pour half the chocolate - a tiny thin layer. Add a dollop of the peanut butter mixture. Freeze for about 5 minutes. Pour the remaining chocolate over the tops. Freeze again for another 10 minutes.
Then you can push out of molds and they are ready to eat.
this is the last bite...yum!
