This year is round 2 for raw vegan gingerbread men at our house.
The recipe this year is actually pretty amazing. My kids LOVE them {mainly for the fun shapes} and so do I. In fact my oldest son had one for breakfast and it's nice being able to say 'SURE' without feeling guilty about it. Gotta love that!
Recipe
DRY INGREDIENTS
1 ¼c oat flour
½c cashew flour
¼c macadamia nut flour
5 whole cloves ground/mashed up
1tsp ginger powder
1tsp nutmeg
½tsp sea salt
WET INGREDIENTS
⅛c coconut oil
¼ + 2 Tbls maple sugar
¼ + 1 Tbls date paste/syrup
You can make your own oat and nut flours by grinding them up into fine powders using a food processor, vitamix OR a coffee grinder. Then, measure out the above amounts.
In a food processor, blend the dry ingredients together. Then add maple sugar and blend again. Add wet ingredients and blend until smooth.
Using a teflex and cookie cutter press dough until flat and create shapes of all kinds. I did mine about ¼-1/2 inch thick. Dehydrate for 12 hours {or overnight}.
