Shannon Marie from Rawdorable did a GREAT post using Kookie Karma Goji Lime Grawola! I love the concept and once again she did it extremely well!
She used the grawnolas to make not only cupcakes but pudding as well. Here's what she did and how she did it. note: I haven't tried it yet but I'm looking forward to it {I want some RIGHT now}!
Put the Lime in the Koko Krunchie Kupcake
½ cup Lime Coconut Krunchies
⅛ cup shredded coconut
1 Tbsp. date paste
*Lime in the Koko Pudding/Frosting (see recipe below)
*More Lime Coconut Krunchies for sprinkling
*Slice or lime and lime zest for garnish
Ina food processor, combine the krunchies and shredded coconut. Process
these ingredients into a flour-like consistency, and transfer the
"flour" to a bowl.
Next, add the date paste. Whisk or use an
electric mixer to combine (you could also use a fork, but this makes it
feel like you are baking). The batter should be moist, but not so damp
that it requires "baking" in a dehydrator.
Form the batter into a cupcake shape using a reusable silicone cupcake liner, and frost it
with the pudding/icing. Sprinkle the top with more of the cereal and
some lime zest. Garnish with a lime slice. Enjoy!
Lime in the Koko Pudding/Frosting
1 banana
½ avocado
1 Tbsp. Artisana Goji Bliss*
1 Tbsp. pistachios
zest of ½ lime
squeeze of lime juice
touch of vanilla
dash of sea salt
Blend all ingredients until smooth and creamy. Frost your cupcake with it and eat the rest with a spoon. Yum!
