Spicy Peanut Noodle Lettuce Wraps
These are fairly easy to put together. The only part of the recipe you need to follow amounts on are for the sauce. The veggie part- you can use what you have on hand, leave something out, add something etc.
Peanut Sauce:
¼ c. peanut butter (I use unsweetened creamy PB)
3 tablespoons fresh lime juice
¼ c. peanut oil
2 tablespoons shoyu (or soy sauce)
¼ c. agave nectar
2 tablespoons water
1-inch piece of ginger, minced
1 serrano chile or half of a habanero (depends on how spicy you want it)
¼ teaspoon sea salt
Blend everything together until smooth.
For the lettuce wraps:
butter lettuce
daikon radish
carrot
savoy or napa cabbage
bean sprouts
cucumber
small handful mint, basil and cilantro
chopped roasted peanuts
Soba noodles- optional
You'll be using the butter lettuce as the wrap, so just separate the nice looking leaves and put aside. Shred the cabbage thin, along with the daikon radish, carrot, and cucumber. I like to make my carrot and radish into matchsticks and the cucumber into half moons. Chop up some mint, basil, and cilantro and toss everything together.
Personally I like the addition of some cooked soba noodles. It adds a little more substance and some more protein. Plus soba noodles only take 5 minutes to cook.
Take your lettuce cups and fill them with some noodles and veggie mixture. Sprinkle some roasted chopped peanuts on top and drizzle with the spicy peanut dressing.
For the moms out there, a lovely glass of Sauvignon Blanc goes really well!

OMG, I love Vanessa. I used to enjoy chatting with her on the GLiving message boards. I doubt she remembers me, though. She offered to make my dad, sisters and I some raw food when we were planning on going to Chicago. Unfortunately, we ended up canceling our trip. Bummer.
