These crunchy bite-size Vegan Macadamia Nut Cheese Bites will knock your socks off. They are simple to make and dehydrated for 5 hours.

There are so many ways to use these little cheese bites. Other than snacking on them you can add them to sushi rolls, salads, crumble on rice, or pasta. Use on salads or in sandwiches or as a snack. My kids LOVE it by itself, with kale chips or with popcorn. They are delicious little guys.
They are tangy but also have that fatty cheese texture to them. I would compare them to feta or parmesan cheese but these are so crunchy that it's not quite the right comparison.
Macadamia Nut Cheese Ingredients
Raw (not roasted) Macadamia nuts - High in healthy fats.
Raw Cashews - a neutral very creamy ingredients that works really well for making vegan cheeses.
Lemon - a must have ingredient when making vegan cheese. The tang and citric acid make the cheese taste delicious.
Nutrition Yeast - this is the ingredients that REALLY puts the cheese flavor over the edge. It mimics the "fermented" taste.
Sea Salt - we all know that cheese is salty. Super salty. That's what makes cheese so addicting and delicious.
Onion - a secret ingredient. Onion powder works well in the runnier cheese dips. But fresh onion in this recipe changes the entire flavor profile.
Recipe Instructions
Everything goes into a food processor or vitamix. And pulsed until everything turns into a crumbly mixture. You don't want a nut butter texture, you definitely want small chunks of nuts and onions.
From there you will divide the mixture into coin sized nuggest.


You will then place the coin sized nuggets onto Teflex dehydrator sheets or parchment paper on top of dehydrator trays or air fryer.
These little nuggets will dehydrate for 5 hours, or until completely dry and crunchy.


Macadamia nuts make a really good ricotta cheese as well.


MACADAMIA NUT CHEESE (raw vegan)
Equipment
- Food processor
- Dehydrator
Ingredients
- 4 cups Raw macadamia nuts
- 1 cup Raw Cashew nuts
- 2 each Lemons juice only
- ¼-1/2 each white onion chopped
- 1 pinch Sea salt
Instructions
- In a food processor grind up all the above in ingredients until still chunky but fairly wet.
- Spread it out in large dollops onto a dehydrator tray. Dehydrate overnight or until very crunchy. About 5 hours.
