Today Marlie is sharing with us a wonderful crispy eggplant recipe {a vegan's take on the traditional style bacon but without the meat}.
Crispy Eggplant Bacon Strips Ingredients
For this crunchy bacon recipe you will only a few healthy simple ingredients.
- Eggplant
- Maple syrup
- Tamari or Nama Shoyu
- Sesame oil
- Mesquite powder
- Sea salt & pepper
Eggplant Bacon Instructions
After you slice the eggplant into bacon size pieces, you will salt each strip and let it sit. The sea salt helps to draw moisture from the eggplant, and also to reduce the bitter taste of the raw flesh. Rinse and pat dry.
In the meantime, in a separate, mix the rest of the ingredients. Coat the strips with this marinade. Place on dehydrator drays and dehydrate.
