Its cold outside and I've been writing a lot, so I have been craving the idea of the perfect frothy beverage. Basically any kind of latte. Unfortunately where I live my alternative milk options are limited to soy, (and even still they can't froth that around here!) I also love Chai Latte's, but they are packed full of sugar. So I decided to make my own.
So simple.
First of all, Brazil Nut milk is the best thing ever. It is totally a staple in my house. I make a batch about once every 3 days. This latte is best with fresh milk, but you can make it any time. As you can see the milk doesn't last very long.
I think that Brazil Nuts make the best latte milk, because it is so rich and creamy. Not only do Brazil nuts taste delicious they are extremely high in healthy fats, minerals and Vitamin E. It is super skin milk.
Brazil Nut Milk
Makes 3 Cups
1 Cup Brazil Nuts (soaked overnight if you have time)
3 Cups Filtered Water
2 tablespoon Coconut Butter (optional, for extra creaminess)
1-2 Dates, pitted (optional)
1 Vanilla Bean
Pinch of Salt
Blend Brazil nuts and water for at least a full minute. Strain out pulp. Blend with remaining ingredients for another minute until frothy.
Chai is so tasty, but also super good for you. The herbal blend of chai is great for digestion and the spices are warming to the body. Authentic chai is used as a healing beverage in ayurveda.
Chai Tea Blend
Makes 8-12 cups of Tea
2 Tablespoons green cardamom pods
2 Tablespoons Tellicherry (black peppercorns)
1 Tablespoon Fennel Seeds
½ teaspoon Coriander Seeds
½ teaspoon Whole Cloves
½ teaspoon Nutmeg, coarsely grated
1 4-inch cinnamon stick, coarsely crushed
½ cup Loose Leaf Black Tea (Assam preferred) * You can sub Rooibos or Mate leaves if you prefer less caffeine.
Stir all ingredients together.
To make tea use approximately 2 teaspoon per cup of tea.
To serve:
Brew tea for 1-2 minutes depending on the strength that you prefer. Pour in Brazil Nut milk and top with foam. Add honey or stevia if you prefer a slightly sweeter drink.
