    Made from the simplest ingredients like coconut cream, vanilla bean, and chocolate chips this recipe is perfect for a sweet tooth craving. It's plant-based, refined sugar, and gluten-free. In other words, 5 Ingredient Vegan Chocolate Chip Ice Cream is totally guilt-free. Oh, and it's a hit with the kids as well (oh and pregnant mamas, I got you, this is a perfect late-night snack for those sweet cravings)!

    Today was a pretty standard day at our house. Nothing major. Just a foggy morning, with a few, peeks of sunshine. A bit humid {I swear, I was sweating all day} and hot in our house. I cleaned all day long. It was one of those days when I just NEEDED to be a homemaker. Did three loads of laundry, changed the sheets, cleaned the dirty dishes, swept the floors, cleaned shower doors; yeah, and it's only been a week since my last big cleaning {oh, life with kids!!!}.

    The park was visited. Friends and their kids came over for a happy hour. New toys were purchased and opened somehow. All the boxes were checked.

    But while the boys were taking their naps I decided to make a quick batch of homemade ice cream. I felt like it would be a great surprise to our otherwise kind of monotonous day? 

    And wow was I right. Not only was it a huge hit, I was happy because it was so easy to make and also healthy. The kids that came for a happy hour also loved it.

    I mean, come on, vegan or not, what kid doesn't like chocolate chips? I mean who cares that it's made from a healthy coconut milk base.

    5 Vegan Chocolate Chip Ice Cream Ingredients

    • Coconut Cream (milk from can)
    • Raw Honey or Agave
    • Vanilla Bean
    • Non Dairy Chocolate Chips
    • Coconut Oil

    I was a bit nervous that my vegan ice cream wouldn't go over well with the non-vegan kids. But all I can say is...it's all gone and everybody was smiling! {score!!}

    5 Ingredient Vegan Chocolate Chip Ice Cream

    Equipment

    • Ice Cream Maker
    • Vitamix

    Ingredients
      

    • 4 cups Coconut cream in a can (full fat)
    • ¾ cup Sweetener (raw honey or agave nectar)
    • 1 tablespoon Vanilla bean or vanilla bean paste
    • ½ cup Non dairy chocolate chips
    • 2 tablespoon Coconut oil

    Instructions
     

    • In a blender blend everything except chocolate chips. 
    • Transfer to your ice cream maker bowl. 
    • Run for 10 minutes then add the chocolate chips. Then keep running for another 20-25 minutes.

      Teresa, I got my ice cream maker for like $35 and it's super easy to use. Basically any liquid turns to an ice-cream-like texture and consistency. Healthy and sweet - you can do sorbets too. It only takes 30 minutes once in the bowl.

      Looks yummy! could you make it ice cream in the vita mix? maybe just leave it on until it freezes? I don't have an ice cream maker, but heard I could make ice cream in my vitamix...

    Easy peasy protein shake using @mikunafoods innova
    Easy peasy protein shake using @mikunafoods innovative protein powder. Its unique in that it’s soy and pea free. It uses “Chocho” which is a complete (plant based) protein with 9g per serving. 
This recipe is quick and healthy. 
1/2-1 whole ripe banana 
1/3 c protein powder
1 1/2 c water 
2 Tbsp raw cashews 
1 Tbsp agave or maple syrup 
Pinch of ginger powder, cinnamon, cardamom and nutmeg or pumpkin spice blend 
Add ice if you want it cold. Otherwise blend well and enjoy.

    If you’re not ready for change, you’re not ready for change. And that’s perfectly ok. 
Making healthy choices isn’t hard work. You “have time” to choose an apple over a bag of chips. Let’s be real here; you just DON’T WANT TO.  And that alone is totally ok!!
Let’s not shame others choices or pressure another to change. If somebody is not happy where they’re at, or they are sick, or in pain, only then will they start examining their current routines and habits. Anger is a great catalysts for change. It often pushes people out if their comfort zones and into action. 
I often hear “I don’t have time to be healthy”. But what that really means is I don’t want to change or I’m afraid of change. And I’m not ready. Change is what they’re nervous about - not the amount of time it takes to chop up vegetables. 
Be kind to yourself…but be honest. 
Notice what you say you desire (weightloss or more energy) and then really examine your habits. Do you make the choices a “thin” person makes? Do you make the choices a rested high energy person needs to make? This might seem obvious but it’s actually not…so often we overlook this gap. We don’t see it and then we get mad at ourselves. Punish ourselves for “failing” over and over again. 
Once you start paying attention to your actions and habits and line them up with your goals - that’s when the magic happens.
