I've always been a yogurt fan. I think I heard it was "healthy" when I was about 5 and had it for lunch everyday until I went to college. (Yes, of course it was the low fat fruity crap) These days I've obviously moved on to bigger and better things, but I still get a craving for that tart, sweet and totally satisfying flavor. I'm definitely not opposed to little bits of high- quality, full- fat, goat or sheep's milk yogurt, but most of the time it isn't quite refreshing enough.
This familiarity is probably is why I am obsessed with making my own coconut "yogurt". My version isn't real yogurt because I never take the time to ferment it, but if you have the patience you certainly can. I fake the healthy bacteria by adding probiotic capsules to this blend.

Ok, let's eat.
RECIPE
1 Young Coconut (Meat and Water)
Juice of 1 Lime
1 Probiotic Capsule
1 Scoop of Tocotrienols
Bee Pollen (optional)
Blend all ingredients except for bee pollen until smooth. Top with pollen.
Serve immediately or slightly chilled.
*To make real fermented coconut yogurt- Blend coconut meat, coconut water, and probiotics until smooth. Allow to ferment at room temperature overnight.
