This post is exceptionally fun because I am blogging a recipe that I discovered on Pinterest. I was hesitant to try it because it didn't actually LOOK that good but the ingredients were SO up my alley. So, I have made my own version of this "chia" jam I found and it's heavenly. I have made it a few times and have finally got it right and got it to look as amazing as it tastes.
At least I think so. I hope so. And I really encourage you to try this recipe. It's totally worth it because it's so simple and so healthy and honestly tastes WONDERFUL {my family is so surprised how good it is}.
Berry Chia Seed Jam Recipe
2 cups berries {I did strawberry one time and blackberry/blue berry mixed next time}
3-4 Tbls maple syrup
1 teaspoon vanilla extract
2 Tbls chia seed
In a Vitamix, blend the berries up with maple syrup and vanilla until smooth but maybe a bit chunky, depending on your jam preferences. Put the mixture in a saucepan and heat on medium to low for about 3-4 minutes while stirring occassionaly. Add chia seeds and turn down the heat to super low/simmer. Keep mixing and mixing while chia seeds start to gel up and jam starts to thicken. About 5 minutes. Turn off head and keep mixing until consistency is perfect.
When readu. Pour mixture into a glass or jar with a lid. When it's cool seal up the container and store in fridge for about 5-7 days.
Idea: Toast a gluten-free piece of toast then spread with coconut oil and sea salt. After it's melted spread on the healthy jam!!!!
