This week has been exceptionally fun yet a tad challenging at times. My son's dad, Wes, has been out of town for 8 days so far and another 3 to go. This means a few things - not much sleep, not much down time, LOTS of patience and also doing activities we don't normally do like Chuck e Cheese, movie theater, board games, bowling and a Target stop for some new toys to play with.
I also don't like working much {whether it be on the blog or at the bank or paying bills} and spending time on my computer when I'm solo at home. I like making healthy food, being organized and spending extra alone time with my boys. However, today we made our very own soda. It was really fun and so pretty. We juiced blood oranges, which are really sweet and tasty right now, and added sparkling water. My kids like bubbly drinks and of course SWEET drinks, so we added a little stevia to one of them and agave to the other.
This got me thinking about the baby shower I'm hosting here at my house next weekend...champagne would be great instead of sparkling water! So I played around in the kitchen for a bit {that was fun} and came up with a few vibrant libations. Not sure I will use them for the shower, but they sure were pretty and delicious.
BLOOD ORANGE MARGARITA
makes 1 beverage
⅔ cup blood orange juice, fresh squeezed
¼ cup 100% agave silver tequila
1 Tbls cointreau or triple sec
½ lemon or lime, juiced
2 Tbls agave nectar {or more to taste}
Ice
Sea Salt, for rim of glass
In a large measuring cup add juice, tequila, cointreau, lime and agave. Stir very well until you don't see agave at the bottom of the cup.
Using a plate, pour sea salt so there is a thin layer. Use a lemon that you already squeezed to wet the rim of your margarita glass. Turn the cup upside down and dip it into the thin layer of salt.
NOTE: You can use flavored salts. I found this really cool sea salt at Sur La Table the other day that had lavendar, rosemary, cumin and a few other spices mixed in. It added such a fun twist to this drink.
Add ice to your glass and pour the margarita over the ice. I liked adding the orange slices to my drink. You could also add lemon wedges for added flavors and texture.

BLOOD ORANGE MIMOSA
makes 1 beverage
½ cup blood orange juice, fresh squeezed and chilled
½ cup champagne
1 Tbls agave nectar {optional}
3 raspberries
A few slices of the orange, for garnish
Combine all ingredients into a glass. Serve and enjoy!
I JUST LOVE ORANGES!!!!!! And seriously, what would the world be like without oranges and orange juice? Pretty boring!
