I had lunch with two of my favorite ladies here in town yesterday and it just made my week! Social hour for busy moms doesn't always have to be at happy hour or at school pick up. Why not a good old lunch date?
Today I'm going to suggest that all you mamas out there make an effort next week - before all the holiday mayhem begins - to get together with a few girlfriends for lunch.
What better way to have lunch than at your house? Take a few minutes to clean up the dishes from breakfast. Spruce up the table with some flowers and get out a good bottle of sparkling water or some homemade iced tea {or if you don't have errands to do later or much driving around - a bottle of rose}.
You might be wondering - but when do I have time to make lunch?
Don't fret, I have just the recipe for you...
The night before, while you're cooking dinner and the kitchen is already a mess, make some homemade pesto and then store it in the fridge.
The next day, chop up half a head of some organic kale and in a bowl squeeze half or 1 whole lemon {depending on the size} all over the kale.
Then using your hands, rub the pesto into the leaves of the kale until each leaf is pretty well covered.
Add chopped tomatoes and cucumber if you have it. And some avocado for an extra hearty lunch.
SO EASY. So tasty. And so simple. And shhhhhhhh, but it's also vegan, raw and super healthy. But nobody would every know!
HOMEMADE VEGAN RAW PESTO
2 cups loosely packed basil
½ cup almonds
handful of pine nuts
1 heaping tablespoon white miso
¼ cup nutritional yeast
¼ olive oil
2 cloves garlic
sea salt to taste
In a food processor combine ingredients and blend until thoroughly mixed and the texture is like a paste.
Stores well in the refrigerator for a week or 2.
Try it with pasta as well!
