    Zucchini "Pasta" :: Italian Style

    I decided to make a very traditional Italian appetizer into a "pasta" dinner. It is so easy and quick, so fresh, so delish and much healthier than traditional linguini.

    This recipe is wonderful as a side dish, quick lunch or even with real wheat pasta as a healthy topping.

    I ate it for breakfast, but then again, I'm not your average eater. {wink}

    You'll also notice that I'm using a spiralizer {that funny looking white machine}. It's $35 or less and can be used for potatoes, squash, carrots, jicama, apples, you name it! I'm going to be sharing a carrot salad recipe soon and potatoes as well {all using the spiralizer so I'd suggest you get one on Amazon}. It's so fun to watch the veggies turn into long strands of hair. Kids think it's so fun and love to be the ones that get to turn the handle. 

    If you do not have a spiralizer, you can use a good carrot peeler to create a similar, but wider, noodle. 

    ITALIAN ZUCCHINI PASTA

    Ingredients

    2 medium zucchini

    ¼ teaspoon truffle infused oil

    1 teaspoon olive oil

    sea salt & pepper to taste

    parmesan cheese, shaved or grated

    ½ small lemon, squeezed {optional}

    Using a spiralizer, make noodles with your zucchini. Add the rest of the ingredients and toss the salad until it's well coated. It's ready to eat after a few minutes of soaking/marinating.

    note: You don't have to add lemon. Try it first without the lemon and see if you need it. I liked it both ways. 

    If you don't like dairy, add lemon juice and some chopped walnuts or avocado.

Just 5 minutes and you’ve got breakfast. So often I get asked for breakfast ideas when transitioning to a plant based diet. This is a great egg sub and is savory and high in healthy protein. 
1 cube medium hard tofu 
1 tsp turmeric 
Salt and pepper to taste. 
1/2 Tbsp olive oil or other cooking oil 
In a frying pan sauté on medium high heat for 5 minutes. Stirring often. Add garlic or onions or cheese. I added spinach to mine. 😋

    If you haven’t made this cold lentil salad yet you’re missing out. It’s tangy (lemon) and full of protein (plant protein). Perfect for a pot luck. Or snack on it for a few days. 
INGREDIENTS
3 cups cooked lentils (cold)
1 whole lemon, juiced
1/2 tsp sea salt
1/2 tap cumin
3 Tbsp dried parsley
1/4 cup olive oil
1/2 zucchini (julienned)
1/4 red onion (Finley chopped)
DIRECTIONS
Mix everything in a bowl. Enjoy.

    Damn this combo of garlic, ginger and tahini over
    Damn this combo of garlic, ginger and tahini over sautéed potatoes is 💣. I love tahini dressing because of how creamy it gets without using cashews or dairy products. I first sautéed the potatoes in vegan butter. I added a few shallots for fun. THAT’S IT. If you cut them thin enough they cook in just 5-6 minutes on medium high heat. I added raw kale to them for added fiber and minerals. 
Dressing 
2 cloves garlic
1/4 inch piece of fresh ginger
1 whole lemon
2-3 Tbsp sesame oil, 
1 heaping Tbsp tahini
2 Tbsp water
big pinch sea salt. 
blend it all together until creamy and chunk-free. 
Enjoy
