I have been overly busy (you probably noticed because I have't posed on the blog in awhile) - probably because my kids started school and myworkload has been insane.
When I get stressed or too busy, this often means I eat a lot of avocado toast, beans and rice, and straight up tofu. Anything easy that I can grab is essentially what gets devoured. But by the end of a day I stop and realize that I need way more vegetables and fruits if I want to have a "balanced diet" of any kind.
As you all know, I'm a smoothie addict because seriously they solve all my fruit and veggie problems. Just throw whatever you have in a blend and voila. Your siping your way to meeting all your servings of fruits and vegetables for the day. Woohoo.
So today I'm excited to tell you that I've teamed up with Jamba Juice Appliances to bring you this really creamy papaya smoothie recipe.

As for my recipe, it can be made in any blender, but I did create it using the Jamba Appliance Quiet Blender.
My Papaya smoothie is thick and creamy, but not too icy or heavy. Papaya is a great fruit to eat alone. Papaya contains enzymes that are said to be great for the digestive tract. Yogurt (dairy-free) is full of gut friendly probiotics. And mint has a very wonderful aroma and flavor.
CREAMY PAPAYA SMOOTHIE
Yields 1 individual smoothie
INGREDIENTS
⅓ cup fresh papaya (skin and seeds removed)
6 oz vanilla yogurt (I used dairy-free)
⅓ cup frozen pineapple chunks
½ frozen medium banana
Small handful of spinach
A few sprigs fresh mint
2-3 tablespoon liquid of choice for blending (I used fresh almond milk)
1 teaspoon hemp seeds
INSTRUCTIONS
Make sure all skin and seeds are removed from fruits and that they are properly chopped up.
Put all of the ingredients into the blender.
Garnish with pineapple chunks, mint and hemp seeds.
Drink immediately.
