    Vegan Pancakes - The One Recipe


    I know the name of this recipe is a little weird sounding but I love calling this vegan pancakes recipe, the "One" Recipe. One banana, one yogurt cup, one egg (substitute), one cup of plant-based milk, one pinch of salt, and so on! Not ½ teaspoon or ¾ cup. Just one of everything! You get the idea.

    I created a similar green smoothie called the one and a half because it calls for one and a half of everything: banana, orange juice, etc.

    My kids love these pancakes (and that smoothie as well). We make them all the time. My eight year old is getting really good at cooking lately. He makes his siblings all kinds of cool breakfasts.


    My mom used to make me similar pancakes growing up. We called them cottage cheese pancakes. You make them with cottage cheese and yogurt. They were so creamy and rich. My sister and I would crave them.

    Good news for us health foodies - this recipe is a super healthy version of the old one but not lack any flavor or creaminess. I couldn't believe it when I first tested this recipe. I felt like a kid again; it had been so long since I had them.




    Vegan Pancakes - the one cup recipe

    yields 10 - 12 pancakes

    INGREDIENTS

    • 1 super ripe banana
    • 1 egg (egg substitute)
    • 1 cup vegan (or regular) yogurt (I used Kite Hill pain)
    • 1 cup almond milk
    • 1 cup gluten-free pancake mix
    • 1 pinch sea salt

    DIRECTIONS

    1. In a blender combine the yogurt, egg, banana and milk. Blend until creamy and no chunks.
    2. Add the wet mixture to the dry pancake mix and whisk together by hand.
    3. Cook on a griddle the same way you would cook any other pancakes. Grease pan with some oil or butter and press down the pancake mixture each time you flip. The batter will be thick.
    4. Serve when the pancakes are cooked all the way through but not dry.
    5. Top with fresh fruit and fresh maple syrup.

    Note: If you're making these for a family of 5 you will want to double the recipe. If you are only making them for a few kids, this recipe will do. My entire family eats 4-5 of these so we make a big batch.

        I have tried so many. Bob's Red Mill, Simple Mills, Pamelas! I love them all. This recipe doesn't require any special one. Just choose your favorite or what you have on hand.

      Girlllll, this recipe is bomb!! Made the best pancakes ever. For reference, I halved the recipe, used Birch Benders paleo pancake mix, and replaced the egg with half the volume of boxed egg white. I also found that with this combo, I didn’t need any liquid at all. THANK YOU!!!

    Easy peasy protein shake using @mikunafoods innova
    Easy peasy protein shake using @mikunafoods innovative protein powder. Its unique in that it’s soy and pea free. It uses “Chocho” which is a complete (plant based) protein with 9g per serving. 
This recipe is quick and healthy. 
1/2-1 whole ripe banana 
1/3 c protein powder
1 1/2 c water 
2 Tbsp raw cashews 
1 Tbsp agave or maple syrup 
Pinch of ginger powder, cinnamon, cardamom and nutmeg or pumpkin spice blend 
Add ice if you want it cold. Otherwise blend well and enjoy.

    If you’re not ready for change, you’re not ready for change. And that’s perfectly ok. 
Making healthy choices isn’t hard work. You “have time” to choose an apple over a bag of chips. Let’s be real here; you just DON’T WANT TO.  And that alone is totally ok!!
Let’s not shame others choices or pressure another to change. If somebody is not happy where they’re at, or they are sick, or in pain, only then will they start examining their current routines and habits. Anger is a great catalysts for change. It often pushes people out if their comfort zones and into action. 
I often hear “I don’t have time to be healthy”. But what that really means is I don’t want to change or I’m afraid of change. And I’m not ready. Change is what they’re nervous about - not the amount of time it takes to chop up vegetables. 
Be kind to yourself…but be honest. 
Notice what you say you desire (weightloss or more energy) and then really examine your habits. Do you make the choices a “thin” person makes? Do you make the choices a rested high energy person needs to make? This might seem obvious but it’s actually not…so often we overlook this gap. We don’t see it and then we get mad at ourselves. Punish ourselves for “failing” over and over again. 
Once you start paying attention to your actions and habits and line them up with your goals - that’s when the magic happens.
