    Vegan Chinese Chicken Salad

    Oh boy, I think I just created a new weekly staple. This Healthy Vegan Chinese Chicken Salad will not only leave you completely satisfied but it will have your taste buds jumping for joy! There are so many different flavors and textures. There is a little peppery flavor, some sweet heat, tons of different fresh herbs, toasted oils and nuts, and a touch of salt all combined with the fresh crunchy flavorful cabbage, carrots, and greens.

    This recipe not only tastes delicious but is easy to make - takes only 15-20 minutes max - and requires not cooking. I love Tofurkey's vegan oven roasted "chicken" that my local health food stores sells. The texture is like chicken but the flavor is better, the ingredients are pretty clean and there's a ton of protein. I added this to the salad for extra protein and to minic the traditional recipe.

    This Salad is filling and would be a great pot luck dish.

The dressing combines fresh ginger, lemon and garlic (great for cold prevention) with almond butter and toasted sesame oil.     The salad dressing makes this dish come alive. Simply pour on dressing and slather all the fresh vegetables. Toss over and over until salad is nice and creamy. Garnish with toasted almonds or peanuts and more fresh herbs or scallions. One of my favorite salad garnishes is toasted sesame seeds.

    Healthy Chinese "Chicken" Salad

    The Chinese Chicken Salad has a fresh new look and feel: no real chicken meat in this recipe; just tons of veggies and mock chicken protein. You'll love the tangy yet toasted flavor with the crunchy raw vegetables.
     
    Ingredients
    • 1 cup, finely sliced or grated purple cabbage
    • 1 cup, finely sliced or grated green cabbage
    • 3, julienned carrots
    • 2 cups other greens of choice (i.e. romaine or arugula)
    • 2 thinly sliced and chopped radishes
    • ¼ cup, chopped fresh mint
    • ¼ cup, chopped fresh cilantro
    • 1 cup, shredded or chopped (I use Tofurkey Brand) "chicken"
    • 2, finely chopped green onion (scallions)
    • 3 tablespoon toasted almonds or peanuts
     
    Instructions
    Prep veggies by chopping, slicing and shredding. Add to a large salad bowl. Toss well. Add chicken and nuts, then toss again. Dress the salad when ready to serve. Toss well. Serve immediately.

    Chinese "Chicken" Salad Dressing

    This dressing is so tangy, not too sweet, and a touch spicy! Makes a perfect dressing for any Asian style salad.
     
    Ingredients
    • 3 cloves, minced garlic
    • ½ tsp, grated fresh ginger
    • 1 tablespoon rice vinegar or apple cider vinegar
    • 2 tablespoon almond butter
    • 3 tablespoon tamari
    • 3 tablespoon toasted sesame oil
    • 1 teaspoon (or to taste) honey or agave nectar
    • ½ teaspoon red chili flakes or tabasco
    • 1 tablespoon fresh lemon or lime juice
    •  
     
    Instructions
    Place everything in a high speed blender or large measuring cup. Whisk until completely well combined or blend on medium until well combined. Dress the salad when ready to serve. Toss well. Serve immediately.

    Easy peasy protein shake using @mikunafoods innova
    Easy peasy protein shake using @mikunafoods innovative protein powder. Its unique in that it’s soy and pea free. It uses “Chocho” which is a complete (plant based) protein with 9g per serving. 
This recipe is quick and healthy. 
1/2-1 whole ripe banana 
1/3 c protein powder
1 1/2 c water 
2 Tbsp raw cashews 
1 Tbsp agave or maple syrup 
Pinch of ginger powder, cinnamon, cardamom and nutmeg or pumpkin spice blend 
Add ice if you want it cold. Otherwise blend well and enjoy.

    If you’re not ready for change, you’re not ready for change. And that’s perfectly ok. 
Making healthy choices isn’t hard work. You “have time” to choose an apple over a bag of chips. Let’s be real here; you just DON’T WANT TO.  And that alone is totally ok!!
Let’s not shame others choices or pressure another to change. If somebody is not happy where they’re at, or they are sick, or in pain, only then will they start examining their current routines and habits. Anger is a great catalysts for change. It often pushes people out if their comfort zones and into action. 
I often hear “I don’t have time to be healthy”. But what that really means is I don’t want to change or I’m afraid of change. And I’m not ready. Change is what they’re nervous about - not the amount of time it takes to chop up vegetables. 
Be kind to yourself…but be honest. 
Notice what you say you desire (weightloss or more energy) and then really examine your habits. Do you make the choices a “thin” person makes? Do you make the choices a rested high energy person needs to make? This might seem obvious but it’s actually not…so often we overlook this gap. We don’t see it and then we get mad at ourselves. Punish ourselves for “failing” over and over again. 
Once you start paying attention to your actions and habits and line them up with your goals - that’s when the magic happens.
