    Loaded Vegan Nachos. Crunchy, CHEESY, salty, creamy, zesty and hearty nachos!

    Yes, you heard me right! Who doesn’t want a bowl full of nachos? Loaded Vegan Nachos?

    Actually me 🙋‍♀️.

    I have to admit, I haven’t had nachos since maybe high school. I think of nachos and I think of super unhealthy fried food. It’s a major turn off. This is why I wanted to recreate something HEALTHY(er) and worth eating. But also so delicious you feel like it’s a guilty pleasure.

    Now I can officially say it with confidence: nobody doesn't want a bowl of healthy delicious guilt-free nachos (wink) including ME.

     

     


     

    Loaded Vegan Nachos Recipe Variations

    You can totally personalize my Loaded Vegan Nacho recipe. It’s really versatile and really easy.

    The key is the cheese sauce. I used my own PURE cheese sauce because it’s insanely good. But you can use whatever you’d like, even shredded will work. Try adding meat. Maybe seasoned Impossible type of ground meat or my Walnut Meat is always a really amazing super healthy (made with all natural ingredients like walnuts) addition.

    You can add refried beans instead of black beans. Even roasted peppers or corn. 

    There are lots more fun things you can do with vegan nachos.

    My chips are loaded with:

    • Avocados
    • Jalapenos
    • Tomatoes (salsa or pico de gallo - this is one of my favorite recipes for salsa)
    • Pepperoncini
    • Black beans
    • Red onion
    • Sour cream
    • Cheese Sauce

    Shown above is my PURE cheese (you can make a similar version as well) sauce as well as a homemade sour cream. Sour cream should be mild but still flavorful. Not too salty. Try my homemade cashew sour cream recipe for this. Or use something store bought.

    Loaded Vegan Nachos

    Serves 4-5

    INGREDIENTS

    • 2 bags of your favorite corn chips

    • 1 avocado, sliced or mashed

    • 1 cup PURE cashew cheese dip

    • ¾ cup vegan sour cream

    • ½ cup pepperoncini

    • ½ cup jalapeno pepper, thinly sliced

    • ¾ cup red onion, thinly sliced

    • tomato or pico de gallo

    • 1 ½ cup black beans, canned (or refried beans work well too but you’ll want to heat them first)

      optional toppings: cilantro, shredded cabbage, tomatillo salsa, green onion, refried beans, hot sauce and/or crumbled (vegan) meat.

    DIRECTIONS

    1. On a large cookie sheet, layer chips first. Spread them out thin (about 10-12 chips).

    2. Sprinkle chip with half the amounts of black beans, sliced jalapeno pepper, sliced red onion, pepperoncini, and tomato.

    3. Pour half the amount of cheese and sour cream. (tip: I love using a squeeze bottle when I pour sauces over pizza or nachos, etc).

    4. After that layer another round of chips on top of all the sauces and toppings.

    5. Repeat steps 2 and 3.

    6. Serve immediately.

    Ingredients
      

    • 2 Bags of your favorite corn chips

    • 1.5 cup Black beans

    Instructions
     

    • On a large cookie sheet, layer chips first. Spread them out thin (about 10-12 chips).
    • Sprinkle chip with half the amounts of black beans, sliced jalapeno pepper, sliced red onion, pepperoncini, and tomato.
    • Pour half the amount of cheese and sour cream. (tip: I love using a squeeze bottle when I pour sauces over pizza or nachos, etc).

    Easy peasy protein shake using @mikunafoods innova
    Easy peasy protein shake using @mikunafoods innovative protein powder. Its unique in that it’s soy and pea free. It uses “Chocho” which is a complete (plant based) protein with 9g per serving. 
This recipe is quick and healthy. 
1/2-1 whole ripe banana 
1/3 c protein powder
1 1/2 c water 
2 Tbsp raw cashews 
1 Tbsp agave or maple syrup 
Pinch of ginger powder, cinnamon, cardamom and nutmeg or pumpkin spice blend 
Add ice if you want it cold. Otherwise blend well and enjoy.

    If you’re not ready for change, you’re not ready for change. And that’s perfectly ok. 
Making healthy choices isn’t hard work. You “have time” to choose an apple over a bag of chips. Let’s be real here; you just DON’T WANT TO.  And that alone is totally ok!!
Let’s not shame others choices or pressure another to change. If somebody is not happy where they’re at, or they are sick, or in pain, only then will they start examining their current routines and habits. Anger is a great catalysts for change. It often pushes people out if their comfort zones and into action. 
I often hear “I don’t have time to be healthy”. But what that really means is I don’t want to change or I’m afraid of change. And I’m not ready. Change is what they’re nervous about - not the amount of time it takes to chop up vegetables. 
Be kind to yourself…but be honest. 
Notice what you say you desire (weightloss or more energy) and then really examine your habits. Do you make the choices a “thin” person makes? Do you make the choices a rested high energy person needs to make? This might seem obvious but it’s actually not…so often we overlook this gap. We don’t see it and then we get mad at ourselves. Punish ourselves for “failing” over and over again. 
Once you start paying attention to your actions and habits and line them up with your goals - that’s when the magic happens.
