Pine nuts, cashews, and hemp seeds instead of milk, cream, and butter. This creamy No-Cook Vegan Alfredo Sauce doesn't at all taste like should be healthy.

  • Vitamix

  • 7 oz Gluten-free Fettuccini noodles
  • ½ cup Raw cashews
  • ¼ cup Raw pine nuts
  • cup Nutritional yeast
  • ½ teaspoon Cracked black pepper
  • 1 teaspoon Sea salt
  • ¼ cup Shelled hemp seeds
  • ½ cup Oat milk
  • 1 Lemon juice only
  • 2 cloves Raw Garlic
  • ½ cup Fresh herbs like parsley

  • In a Vitamix container add the nuts, salt and seeds, and nutritional yeast (dry ingredients). Blend until they turn into a mealy flour consistency.
  • Add the rest of the ingredients (wet ingredients) and blend again until almost smooth. Stop and scrape the sides of the container to help it blend better. Blend again until it's creamy and well mixed but maybe a tad grainy for some interesting texture.
  • Meanwhile, you'll want to cook the fettuccine noodles in a large pan of boiling water. About 8 minutes.
  • Strain pasta. Add creamy alfredo sauce to the warm noodles. Serve warm.
  • Garnish with your favorite fresh herbs.
